How can we be sure what the Prophet recorded was accurate?

The Prophet (peace be upon him) was unable to read or write. Everything the Companions (May Allah have mercy on them) recorded was through the Prophet (peace be upon him). How do we know what the Prophet had given to be passed down is accurate despite his illiteracy?
